All the CM10 roms are stable. Even the nightly are pretty stable.
Search for CM10 in the i9000 Android development forum. And you can flash Semaphore 2.4.4 on that as well.

[Q] Stable Jelly Bean

Hi everyone,
I'm wondering if we'll have stable Jelly Bean ROM, I know it will be possible when we have he source code of kernel 3 from the official ICS update but will the ROM be %100 stable (Like Galaxy S)? I am asking because so far we don't have bug-free CM7.2 so will the situation be any different in CM10?
Thanks in advance and forgive me if this's been asked before

well , we will have an official ics upgrade soon , so when it goes out all the bugs in the current ics roms and jb roms will be fixed
and you are a bit wrong about cm7 ,, there is a boyope's modded cm7 wich is 99.9% stable ,, but for now there is no stable
ics or jelly bean rom
I have used ics for 2 months and it is very stable for me. Not many sod's or freezes at all no lag and good ram managment.

You should root it first described here: http://forum.xda-developers.com/showthread.php?t=1329360
Then I would flash PhilZ-cwm6 Safe Kernel http://forum.xda-developers.com/showthread.php?t=1901191
Then you can pick your favorite ROM here: http://forum.xda-developers.com/forumdisplay.php?f=1349
There are installation tutorials inside (almost always)

ICS Devil kernel is 1.4.1 My Android Collections
but is not a ics rom, it is just the name of the team. The rom is a Jelly Bean.
