If you wanna brick your Xperia, then go ahead.
I dont think that Touch HD and Xperia share the same radio rom.
Is there any offline FM radio app for a Sony X8? I am using a custom rom, without a built in radio software.

Firmware includes radio so yes, they'll all be updated.

I don't believe there are any stand alone radios.
It's always a good idea to do the firmware as a whole...as all the bits are put together to work together.
